You’re right, they did more than guess. The Romans built the chorobates, a long level beam, and used it with the groma to lay out a grade within a few parts in a thousand – about a tenth of a degree. They didn’t leave it to chance; they calculated it, then checked it on the field, and only after that did they pour the concrete. Anything less would have sent the water running uphill.
